A tangy veggie side dish that goes well with any savory dish such as steak.

The flavor is all in the dressing, so you can add or substitute your favorite vegetables. So far I've also tried broccoli, celery, carrot, chick peas, mixed beans, and cucumbers. I also tend to double or triple the recipe because it's so good!

Difficulty: Easy.
Prep time: 10 minutes + 1 hour chilling time.
Servings: 4 small dish.

Ingredients

Dressing.

  • 15 ml (1 tbsp) Olive Oil.
  • 5 ml (1 tsp) White Vinegar. The original recipe calls for White Vinegar, but you can use just about anything. We usually have both Apple Cider and Rice Vinegar. Those don't change the intended flavor much, but Balsamic Vinegar might be too extreme.
  • 1.42 grams (2/3 tsp) Curry Powder.
  • 2.85 grams (1/2 tsp) Salt.

Vegetables.

  • 85 grams (1/2 cup) Onion (Yellow or Brown), chopped. About 1/2 medium onion.
  • 150 grams (1 can) Soy Beans.
  • 75 grams (1/2 cup) Green Bell Pepper, seeded and chopped. Or use 2 small "piman" peppers.

Preparation

  1. Mix the oil and spices in a small container.
  2. Add the vegetables, and mix again to coat the vegetables with the dressing.
  3. Chill for at least 1 hour.

Storage

Store refrigerated in an airtight container for up to one week.
