Lemon Curd Recipe
Lemon Curd is a tart and colorful topping for cheesecakes and other desserts.
Difficulty: Easy.
Prep time: 3 minutes + 60 minutes chilling time.
Cook time: 10 minutes.
Servings: 1 container (1 serving=1 3/8 cups, plenty for one cheesecake).
Ingredients
120ml (1/2cup) Lemon Juice.
2grams (2tsp) Lemon Zest. Not essential.
85grams (6tbsp) Butter, preferably unsalted, cut into small pieces.
101grams (1/2cup) Granulated Sugar.
150grams (3whole) Eggs, lightly beaten.
Preparation
Combine Sugar and Eggs in a heavy saucepan and mix well. This first step is important because the sugar helps prevent the eggs from curdling when heated.
Add Lemon Juice and Lemon Zest.
