Preparation
Combine Lemon Juice, Lemon Zest, Sugar, and Eggs in a heavy saucepan.
Add Butter, and cook over low heat until thick enough to hold whisk marks and bubbles begin to appear on the surface, about 6 minutes.
Do not burn

Transfer to a bowl and cover the surface with plastic wrap to prevent a film from forming.
Chill for 1 hour before using.
