Lemon Curd Recipe
Lemon Curd is a tart and colorful topping for cheesecakes and other desserts.
Difficulty: Easy.
Prep time: 3 minutes + 60 minutes chilling time.
Cook time: 10 minutes.
Servings: 1 container (1 serving=1 3/8 cups, plenty for one cheesecake).
Ingredients
- 120 ml (1/2 cup) Lemon Juice.
- 2 grams (2 tsp) Lemon Zest. Not essential.
- 85 grams (6 tbsp) Butter, preferably unsalted, cut into small pieces.
- 101 grams (1/2 cup) Granulated Sugar.
- 150 grams (3 whole) Eggs, lightly beaten.
Preparation
- Combine Lemon Juice, Lemon Zest, Sugar, and Eggs in a heavy saucepan.
- Add Butter, and cook over low heat until thick enough to hold whisk marks and bubbles begin to appear on the surface, about 6 minutes. Do not burn.
- Transfer to a bowl and cover the surface with plastic wrap to prevent a film from forming.
- Chill for 1 hour before using.
