Banana Bread Recipe
There are many Banana Bread recipes around. Here's another easy one.
In my opinion the optional vanilla and cinnamon are unnecessary, but you decide.
Difficulty: Easy.
Prep time: 10 minutes.
Cook time: 60 minutes.
Servings: 1 loaf, about 10 slices.
Before You Begin
This recipe calls for a "Standard 9 x 5 Loaf Pan", which is measured at the top of the pan. Depending on your oven and the size of your pan, please reduce the cooking time by as much as ten minutes.
Ingredients
- 250 grams (2 cups) All-purpose Flour.
- 151 grams (3/4 cup) Light Brown Sugar. Pack when measuring by cups. Regular granulated sugar will work if you're out of brown sugar.
- 1.42 grams (1/4 tsp) Salt. Omit this if you have salted butter.
- 4.80 grams (1 tsp) Baking Soda.
- 2.64 grams (1 tsp) Cinnamon Powder (optional).
- 114 grams (1/2 cup) Unsalted Butter, softened to room temperature. Vegetable oil will work, too.
- 100 grams (2 whole) Eggs, lightly beaten.
- 4.9 ml (1 tsp) Vanilla Flavoring (Extract or Essence, optional).
- 270 grams (1 1/2 cup) Bananas, peeled and mashed. One medium, peeled banana weighs about 90 grams, and you can mash them in a bowl with a fork. You can add up to about 1/3 more banana to this recipe without any problem.
- 75 grams (3/4 cup) Optionally, Nuts (chopped) or Raisins. Walnuts or pecans generally used. Weight here depends on type, so measure by volume.
Preparation
- Whisk together dry ingredients (Flour, Light Brown Sugar, Salt, Baking Soda).
- Mix liquid ingredients (Eggs, Butter or Oil, optional Vanilla).
- Combine liquid incredients with dry ingredients and mix well.
- Mash the bananas with a large fork into small pieces, and add these to the mixture. You can also add the bananas directly to the mixture and break the pieces up an electric mixer. Don't make a paste—leave some chunks.
- Mix in optional Nuts or Raisins.
- Grease a loaf pan. You can instead use a baking liner, or you can grease the sides and line in the long direction with a piece of baking paper, leaving some sticking at each end so you have handles to pull the bread out of the pan.
- Bake in a preheated oven at 175 °C (350 °F) on lower rack for 60 to 65 minutes or until golden brown and a knife inserted in the middle comes out clean. NOTE: Cooking time will vary depending on the size and material of the pan as well as your particular oven. In my Oven Toaster at 180 °C using my slightly large loaf pan, 55 minutes is plenty of time, plus I placed a piece of foil over it for the final 5 minutes to prevent burning.
Storage
Store for up to a week wrapped in plastic. You can freeze this for up to two months. In this case you should first wrap it plastic and then wrap in foil.
