Hot Italian Sausage Recipe Image

Do you need Hot Italian Sausage for your lasagna, sandwich, or pizza, but can't find it in your area? You can make it yourself with this recipe!

This recipe describes how to make the sausage contents. We're not actually going to make sausages in casings since the first thing you do for most recipes is remove the casings and chop up the meat anyway.

Difficulty: Easy.
Prep time: 10 minutes.
Cook time: cooking time in your final dish.
Servings: 9 sausage equivalents (1=about 100 grams or 3.5 ounces).

Ingredients

  • 900 grams (2 lbs) Lean Ground Pork or mixed Ground Pork/Beef.
  • 11 grams (2 cloves) Garlic, fresh minced.
  • 11.38 grams (2 tsp) Salt.
  • 2.88 grams (1 1/4 tsp) Black Pepper, fresh ground, amount to taste.
  • 13.80 grams (2 tbsp) Paprika.
  • 11.76 grams (2 tbsp) Fennel Seed.
  • 2.03 grams (3/4 tsp) Red Pepper (dried, crushed). I never have any of this, and it comes out fine anyway. This only makes it hotter.
  • 2.25 grams (1 1/4 tsp) Cayenne Pepper. Measure carefully!
  • 30 grams (1/2 cup) Parsley, fresh chopped.
  • 80 ml (1/3 cup + 1 tbsp) Red Wine.

Preparation

  1. Mix all of the ingredients in a large bowl. If you must do this by hand, use a glove or a plastic bag to cover your hand.
  2. Cover and chill for a several hours to allow the spices to further diffuse into the meat.
  3. Shape into patties or stuff into casings. Hey wait a minute! Every recipe containing Italian Sausage says "remove the sausage from the casing before use". If you want to use these in lasagna, just mix the meat into your lasagna recipe. And if you want a sandwich, just shape it as a burger or sausage.
  4. Cook before serving.
