Linguica (Linguiça) is a kind of Portuguese sausage, and is easy to find in Hawaii or southeast New England. Can't get there? You can make it yourself with this recipe!

This is great eaten like a hot dog on a lightly buttered bun, as a submarine sandwich ingredient with some sautéed onions and peppers, as a pizza topping, and as a breakfast sausage.

Difficulty: Easy.
Prep time: 20 minutes + 4 hours chilling time.
Cook time: 4 hours if you smoke it (optional), plus cooking time in your final dish.
Servings: 7 sausage equivalents (1=about 143 grams or 5 ounces).

Before You Begin

This recipe describes how to make the Linguiça contents. We're not actually going to make sausages in casings since the first thing you do for most recipes is remove the casings and chop up the meat anyway.

Ingredients

  • 1,000 grams (2 1/4 lbs) Lean Ground Pork or mixed Ground Pork/Beef.
  • 8.40 grams (1 tbsp) Garlic, fresh minced.
  • 3.14 grams (3/4 tsp) Granulated Sugar.
  • 17.07 grams (1 tbsp) Salt.
  • 2.40 grams (1 tsp) White Pepper.
  • 13.80 grams (2 tbsp) Paprika.
  • 1.01 grams (1 tsp) Oregano (dried type).
  • 1.17 grams (1/2 tsp) Fennel Seed.
  • 0.90 grams (1/2 tsp) Cayenne Pepper.
  • 14 ml (1 tbsp) White Vinegar.
  • 80 ml (1/3 cup) Sweet Red Wine such as Madeiera.

Preparation

  1. Mix all of the ingredients in a large bowl. If you must do this by hand, use a glove or a plastic bag to cover your hand.
  2. Cover and chill for a several hours to allow the spices to diffuse into the meat.
  3. Shape into patties or stuff into casings.
  4. Optionally cure them in a smoker for 3 to 4 hours. Technically speaking it is really Spanish "Longanzia" sausage if it's not smoked, but close enough.
  5. Cook before serving.

Storage

Store refrigerated in an airtight container for up to one week. You may also freeze this for up to 3 months.
