Jumbo Dinner Rolls Recipe
We love both the taste and texture of these rolls.
Difficulty: Easy.
Prep time: 20 minutes + rise time.
Cook time: 18 minutes.
Servings: 16 rolls.
Before You Begin
You will need a large baking dish for this recipe exactly as-is. Instead, I frequently make mine in five or six pound cake tins. That way
the roll come out somewhat square and work nicely as sandwich buns.
Ingredients
470grams (3 1/4cup) All-purpose Flour.
7.1grams (tsp2 1/4) Instant Yeast. Approximate amount is ok If using Active Dry Yeast, increase by 25%.
50grams (1/4cup) Sugar.
5.69grams (1tsp) Salt.
57grams (1/4cup) Butter or Margarine cut into pieces. Unsalted butter is preferred.
50grams (1whole) Egg, lightly beaten.
240ml (1cup) Whole Milk.
60ml (1/4cup) Water.
Preparation
Heat the Water and Butter in a small bowl in a microwave until the Butter melts, 30 to 60 seconds. Allow to cool about ten minutes before mixing with the rest of the ingredients.
For Active Dry Yeast only: Add Yeast to the Water/Butter, and allow it to proof until bubbles start to form, about 10 minutes.
In a large bowl, mix Flour, Water, Butter, Yeast, Milk, Sugar, Salt, and Egg until all ingredients are incorporated.
On a lightly floured surface, knead the dough until elastic, but not sticky, about 10 minutes. I cheat here: I use a breadmaker.
Move the dough to a lightly oiled bowl, cover with a towel or plastic wrap, and allow to rise for about 60 minutes. I cheat here too, and do the first rise in my breadmaker.
Place the dough on a lightly floured surface, and divide into equal amounts, rolled into balls. A scale is helpful here, and each roll should weight about 56 grams.
Place the dough balls in a large, lightly oiled baking dish, cover, and allow to rise again for another 60 minutes. The rolls should be close together. My third cheat is that I put them in pound cake tins instead of a baking dish. Using the tins results in squarish rolls. You can even use larger chunks of dough to make small loaves of bread instead of rolls.
Preheat oven to 200°C (400°F).
Optionally brush the dough with melted Butter, melted Margarine, or Milk to improve browning.
Bake 14 to 18 minutes until golden brown.
Cool on a wire rack for about 10 minutes before removing from the container.
Serving Suggestions
Fantasic when fresh out of the oven, either plain or a little butter. Serve with butter or jam, or use these as the bun for you favorite sandwich.
Storage
Store in a sealed container for up to one week. Store in refrigerator if you're in a hot environment.
