This is insanely simple, flavorful, and is loaded with your favorite veggetables.
This recipe requires a 5 liter (5.3 quart) Dutch Oven or similar pot
.The exact type and volume of the vegetables is totally unimportant! We especially love the chunks of onion and tomatoes for the basic flavor, and then fill up the pot with whatever else is in the refrigerator. If we had a bigger pot, I'd throw more stuff in.
This doesn't have much spice in it, so some people may prefer to add more salt and pepper.
Serve for lunch or light dinner with bread or toast.
Store in an airtight container for up to one week.
