This is insanely simple, flavorful, and is loaded with your favorite veggetables.

Difficulty: Easy.
Prep time: 15 minutes.
Cook time: 40 minutes.
Servings: 12 soup bowls.

Before You Begin

This recipe requires a 5 liter (5.3 quart) Dutch Oven or similar pot

The exact type and volume of the vegetables is totally unimportant! We especially love the chunks of onion and tomatoes for the basic flavor, and then fill up the pot with whatever else is in the refrigerator. If we had a bigger pot, I'd throw more stuff in.

Ingredients

  • 450 grams (1 lb) Chicken Breast or Thigh meat. Remove skin and cut into bite-sized pieces.
  • 800 grams (2 14 oz. cans) Canned Whole Tomatoes, undrained.
  • 340 grams (2 cups) Onions (Yellow or Brown), quartered. Cut along the grain to get large pieces; don't chop.
  • 275 grams (1/4 head) Cabbage. Cut into wedges (not too big or the pieces will be hard eat with a spoon).
  • 392 grams (2 medium) Zucchini, sliced.
  • 144 grams (2 large) Carrots, peeled and sliced.
  • 128 grams (1/2 medium head) Broccoli florets.
  • 1,020 ml (4 1/4 cups) Chicken Broth or equivalent. I usually use water plus 3 tbs of "Torigara Soup".
  • 5.69 grams (1 tsp) Salt.
  • 1.17 grams (1/2 tsp) Black Pepper, fresh ground.
  • 1.01 grams (1 tsp) Oregano (dried type).

Preparation

  1. Cut everything as described in the ingredients list. Add to the pan with onions and cabbage at the bottom, then the chicken, and finally the other vegetables.
  2. Sprinkle on Salt, Pepper, and Oregano.
  3. Add tomatoes.
  4. Add Chicken Broth. Try to stir a little to mix in the spices if you can (the pot may be full).
  5. Bring to boil, reduce heat, and simmer for 30 minutes before serving.

Serving Suggestions

This doesn't have much spice in it, so some people may prefer to add more salt and pepper.

Serve for lunch or light dinner with bread or toast.

Storage

Store in an airtight container for up to one week.
