Breakfast Sausage Recipe Image

These are easy to make, and kids love them on their English Muffins for breakfast or snacks.

Feel free to adjust the herbs and spices to what your family likes. Perhaps some Rosemary or even Garlic might be interesting.

材料

  • 450 grams (1 lb) Lean Ground Pork or mixed Ground Pork/Beef.
  • 6.28 grams (1 1/2 tsp) Light Brown Sugar.
  • 5.69 grams (1 tsp) Salt.
  • 0.35 grams (1/2 tsp) Sage (dried type).This provides the dominant flavor that you want for a "breakfast" sausage.
  • 0.46 grams (1/2 tsp) Thyme (dried, whole type).
  • 1.17 grams (1/2 tsp) Black Pepper, fresh ground.Kids might find this too spicy, so reduce this as appropriate.
  • 0.25 grams (1/4 tsp) Oregano (dried type).
  • 0.59 grams (1/4 tsp) Nutmeg Powder.
  • 0.45 grams (1/4 tsp) Cayenne Pepper.Reduce this if you don't want it to be "hot", especially if kids will be eating it.

準備

  1. Mix all of the ingredients in a bowl. I don't have a mixer appropriate for this, so I use plastic gloves (or a plastic bag as a glove) to squish everything together.
  2. Shape into patties of 45 grams each (about 1.6 ounces).
  3. If you'll be freezing them, wrap each patty in plastic wrap.
  4. Thin, unfrozen patties can be fried for about 2 minutes per side on fairly low to medium heat. Adjust cooking time for thicker patties accordingly, and turn frequently while cooking to prevent burning. 12.7 mm (1/2 inch) patties take 14 to 16 minutes, and the center should be 71°C (160°F) and no longer pink.

Store three to five days in an airtight container. Can be frozen indefinitely, but best if used within four months.
